Potato Casserole

  • 2 lbs. frozen hash brown potatoes (thawed)
  • 1 tsp salt
  • Pepper to taste
  • 16 oz. sour cream
  • 1 can cream of mushroom soup
  • 1 stick margarine (or butter), melted
  • 1/2 cup onion, chopped
  • 8 oz. cheddar cheese, shredded
  1. Mix thawed potatoes with salt, pepper, sour cream, cheddar cheese, mushroom soup, melted butter and onion.
  2. Bake at 350 for 1 hour.

Egg Sausage Casserole

  • 6 eggs
  • 2 cups milk
  • 6 slices of white bread (cubed)
  • 1 tsp salt
  • 1 tsp dry mustard
  • 1 lb. mild sausage
  • 1 cup grated cheese
  1. Cook, drain and crumble sausage and cool.
  2. Beat eggs, and add milk, salt and mustard.
  3. Add cubed bread and stir.
  4. Add the cheese and sausage.
  5. Put into a glass baking dish.
  6. Place in the refrigerator overnight.
  7. Bake for 45 minutes at 350 degrees.
